A power packed breakfast that will keep you going strong all day long!

Ingredients
1/2 cup (125 mL) Quinoa
1 cup (250 mL) water
1 tsp (5 mL) cinnamon
Pinch sea salt
1/2 cup (125mL) almond milk or rice milk
1 apple chopped
1/2 cup (125 mL) blueberries
1/4 cup (75 mL) chopped walnuts or pecans
Yacon Syrup or Maple syrup (optional)
Goat Whey Protein and Mineral Matrix (optional)
Note: Whenever possible, choose organic, local ingredients.
Directions
1. Quinoa must be rinsed to remove the bitter saponin. Place quinoa in a strainer and rinse thoroughly with water, rubbing the grains together as you rinse.
2. Add quinoa, water, cinnamon and salt to a small pot and bring to a boil. Reduce heat, cover and simmer for 15 minutes, until most of the water has been absorbed.
3. Add milk and simmer for an additional 10 minutes.
4. Stir in chopped apple, berries and nuts. Remove from heat, cover and let sit for 10 minutes so it can thicken a bit more.
5. If desired, drizzle with Agave syrup or Maple syrup before serving for extra sweetness.
6. To increase protein and mineral content, add 1 Tbsp of Goat Whey Protein and/or Mineral Matrix.
