This Asian inspired coleslaw is packed full of flavour and cancer fighting compounds.
Ingredients
1 small head of Napa cabbage shredded (approx. 5 cups) (1.25L)
3 carrots shredded (approx. 2 cups) (500 mL)
5 or 6 green onions thinly sliced
1/4 cup (50 mL) of chopped cilantro (or parsley)
1/4 cup (50 mL) sesame seeds
3 Tbsp (45 mL) brown rice vinegar
1 Tbsp (15 mL) raw honey
3 Tbsp (45 mL) wheat free tamari sauce (soy sauce)
1 Tbsp (15mL) ginger grated
1 to 2 garlic cloves pressed
3 Tbsp (45 mL) toasted sesame oil
Pinch of cayenne powder
Note: Whenever possible choose organic, local ingredients.
For extra protein try adding chicken or sliced beef.
Napa cabbage is also known as Chinese cabbage.
Directions
1. In a large bowl combine the cabbage, carrot, green onion and cilantro.
2. Whisk the remaining ingredients (except the sesame seeds) until well blended. Toss with the cabbage mixture. Add sesame seeds and toss again.
