These beta-carotene rich mashed potatoes make a sweet and colourful side dish to any main course.
Ingredients
2 1/2 lbs sweet potato chopped (approx. 6 1/2 Cups) (1.6L)
1 + 2 Tbsp (15 mL + 30 mL) unsalted butter
2 large pears chopped (approx. 2 1/2 Cups) (625 mL)
1/2 cup (125 mL) pear nectar
1/4 tsp (1 mL) Stevia
1/2 tsp (2 mL) cinnamon
1/4 tsp (1 mL) ginger
1/2 tsp (2 mL) Celtic sea salt
Note: Whenever possible, choose organic, local ingredients.
Note: Stevia can be purchased as a powder, a liquid, or crushed leaves.
Varying degrees of sweetness will occur between different forms and
companies.
Directions
1. Chop potatoes in small chunks and steam potatoes until tender.
2. Melt 1 Tbsp of butter in large skillet over medium heat. Add pears and sauté until they begin to soften, approximately 5 minutes.
3. Add 1/2 cup of pear nectar and bring to a boil. Reduce heat to low, cover and simmer until pears are very tender. Stir often.
4. Once pears are tender transfer to a blender and puree.
5. Place cooked potatoes in a large bowl, add 2 Tbsp of butter and use electric mixer to beat until smooth.
6. Mix in pear puree and spices (stevia, cinnamon, ginger, sea salt) until well blended.
