Rosemary Lamb Chops


An easy to prepare classic, these succulent lamb chops will have your dinner guests asking for the chef’s secret recipe!

Ingredients

5 cloves pressed garlic
3 tsp (15 mL) rosemary
1 tsp (5 mL) thyme
2 tsp (10 mL) Celtic sea salt
1/8 tsp (1 mL) cayenne powder
1/2 cup (125 mL) lemon juice
4 Tbsp (60 mL) extra virgin olive oil
8 lamb chops

Note: Whenever possible, choose organic, local ingredients.

Directions

1. Mix all the ingredients in a bowl except for the lamb chops.

2. Marinate the chops in a container or zip lock bag and pour the ingredients over the chops until both sides are well covered.

4. Marinate overnight or for at least one hour.

5. Discard marinade and cook using the broiler or by pan-frying. Sear both sides of the chops to lock in juices. Cooking time depends on the thickness of your chops, anywhere from 4 to 8 minutes per side.
