Avocado Egg Salad Sandwich


This heart healthy sandwich is a tasty new twist to an old time favourite!

Ingredients

3/4 cup (175 mL) avocado mayonnaise (see avacado mayonnaise recipe)
1 avocado diced
2 green onions chopped fine
4 hard-boiled eggs
1/2 cup (125 mL) red pepper chopped fine
1 tsp (5mL) dill
1/2 tsp (2mL) paprika
1/4 tsp (1mL) sea salt
Lettuce for garnish
Multi-grain bread

Note: Whenever possible, choose organic, local ingredients.

Directions

1. Mash up egg with a fork.  Add avocado mayonnaise, green onion, diced avocado, red pepper, dill, paprika, salt and mix until combined.

2. Lightly toast bread and then butter each piece.

3. Add mixture to bread and top with lettuce.

Makes approx. 4 sandwiches.
