Avocado Mayonnaise


This heart healthy mayonnaise alternative gives you all the taste and none of the guilt!

Ingredients

1 avocado
1 tsp (5mL) lemon juice
1 Tbsp (15mL) dried parsley (or fresh)
1 tsp (5mL) Dijon mustard
1/4 tsp (1mL) Celtic sea salt
1/4 cup (50mL) apple cider (or apple juice)

Note: Whenever possible, choose organic, local ingredients.

Directions

1. Mash avocado with a fork and add lemon juice, mustard, salt, parsley and apple cider.  Mix until all ingredients are well blended.

Makes approx. 3/4 Cup.
